Similarly, his interpretation of Crab Dip Fries, took a popular concept to the next level with a decadent Mornay Sauce & generous chunks of Jumbo Lump Crab. Topgolf has also quietly become a hub for seafood with the crown jewel being Chef’s Maryland Crab Boil with Snow Crab, Mussels, Clams,…, Shake up your night:, I’m going to cheat a little on this one & say that the beverage pairing aspect for Topgolf is one of the larger-than-life Milkshakes that are real show-stoppers.     Jake Alverez knows tequila.  When he is behind the bar at both, Amada, and, Distrito ,, Alverez is reinventing not just how tequila is being served, but how customers are consuming it. Taking a break from mixology, Alverez sat down with us to talk about what helped fuel his passion for crafting new and inventive cocktails, some of the drinks we can expect when he is behind the bar, and how crafting cocktails it is about both  the spirits as well as the customers who will be enjoying…, When did you decide you were going to do more than just serve tequila in the standard way and were going to truly be changing the cocktail game at Ocean Casino Resort ? , Jake Alverez:, I definitely had an interest in tequila at a fairly early age. It was a tradition in my family to drink tequila, but it is different when you are raised around it and grow up around it. I ultimately decided to pursue a career as a bartender because I was looking for a change. Plus, what's more fun than to make drinks for people who want to learn about tequila while at the same time hearing and…,  , To you, what are some of the most overused techniques involving tequila that you would like to see phased out? , JA:, Salt and lime; definitely get rid of it. I would advise anyone that drinks tequila to not buy gold tequila at all. Gold tequilas are artificially colored with caramel.   , For a customer just starting out with tequila (or starting again), what do you recommend? , JA:, I usually start them with a nice smooth tequila. I always say that if you've had a bad experience, spend a bit of money on a really good shot of tequila to get a feel of what a good tequila truly is and then you can determine if it is the spirit for you. ,  , What are you doing at Distrito and as a bartender/mixologist as a whole that is making you stand out? , JA:, I definitely believe in the quality of my drinks. Quality over quantity for sure. I believe in making a cocktail the way it's supposed to be made, and I always tell my bartenders that as long as we are following the recipes and doing the drinks correctly, our customers will appreciate it and continue to come back. I get a lot of guests who say that our margaritas are incredible, and that they…,  , What is one trait tied to your Mexican heritage that you have brought to Ocean Casino Resort that helps both you and the guests you are serving?, JA:, Definitely my knowledge of tequila. Tequila is way more than an alcohol for most Mexicans, it is more of a tradition. Jose Cuervo was actually the first person to give the drink the actual name  “tequila” and that comes from the specific area of Tequila, it was called Mezcal. I always give people the tradition and the knowledge of what Mezcal is and how long it has been around. It has actually…,  , Many people know what wines to pair with beef, chicken or fish, but tequila pairing is not something as well known. Is tequila pairing an art of its own? , JA:, Oh yes, you can definitely do a tequila pairing. I would say something a bit dry like a nice blanco  or even a reposado tends to pair well with seafood. When it comes to meat, I would say a sweet reposado. When it comes to dessert, I would do a cocktail drink. I am currently working on an espresso martini made with tequila that I have just about perfected. I have been doing it at Amada and…,  , What do you think it is about Ocean Casino Resort that gives you the freedom to try new things and infuse your Mexican heritage into what you do on a daily basis? , JA:, I was moved from another Jose Garces restaurant to come here to Ocean and was asked to bring my knowledge and expertise. They have given me a lot of freedom to try new and creative ideas and move the bar around. Our, SVP of Food & Beverage Warren Richard, s has really taken the food and beverage program to the next level and is doing a lot of great things; he has given me more permission to make even better cocktails at both Distrito and Amada. I know a great deal about wines, bourbons and whiskies as well.   , When you have a cocktail yourself after a long day, what is your go-to cocktail? , JC:, It is a nice Old-Fashioned with añejo tequila.  I do both Old Fashioneds and Manhattans with tequila.   , From your standpoint behind the bar, what are some of the trends that you see becoming popular within the next few years? , JA:, Definitely tequila is going to be served more. The next few years you are going to be seeing a lot of Old Fashioneds made with tequila. Palomas have become a very popular drink, and tajin is a spicy rim that we put on drinks - both are becoming very popular as well. Something that I think will be hitting big time by next year is mezcal, it is tequila just not from Tequila, Mexico.     Receiving accolades from Milton Berle and George Carlin is high praise but with a comic like Vinnie Favorito, it's more than well-deserved. After an extended stint in Las Vegas, Favorito returned to Ocean Casino Resort in Atlantic City, performing at HQ2 Nightclub throughout the month of December. We chatted with Vinnie as he prepared to bring his show back to Ocean, touching on his Boston comedy…, Live comedy is returning all over the country, and you will be at , HQ2 Nightclub at, Ocean Casino Resort on December 18th. Are you excited to come back to the East Coast? , Vinnie Favorito: I am, I was in Vegas for all of those years and came home to the East Coast. I used to do Atlantic City years ago, so it’s really great to be back. ,  , Would you say that your comedy has an East Coast sensibility? ,   VF: Oh absolutely. It’s definitely in my wheelhouse, although I do love Vegas and have fans across the country.   , You are known for your roast-style comedy and crowd interaction, but that is probably what people absolutely love seeing you do, is that fair? ,   VF: I think it is very fair. Listen, I know that the world has changed, but there is still a following for what I do. I stand my ground as far as being politically correct, but I do it with likability. Believe it or not, I win over crowds from every walk of life that attend my shows. They realize that I am not just making fun of them, I am making fun of everyone and we are all laughing together…, Many think that you absolutely shine when it comes to a roast. Roasts are known to be hilarious, and the comedy is laser-focused on the subject of the roast on the dais. Are they where you feel you absolutely shine? ,   VF: That is what my show is every night. It’s like a celebrity roast and the audience members get to be the celebrity. Once I get to you it becomes a continuous roast; you think it’s over after I get to you and move onto someone else, then I call back to you. It really a lot of fun; I just love it so much!   , So many comedians are influenced by the ones that came before them. Who are some of the comedians that truly have influenced you? ,   VF: I’ve always been compared to Don Rickles. Milton Berle actually made me an honorary member and I would always do the roasts at the Friars Clubs. I did a show one night in Hollywood after which Milton Berle called over all of the photographers after I got off the stage and had me sit with him and his wife. He said  “this guys new name is "Rickles with venom”" ; it was perfect. George Carlin…, You have had so many rare experiences that many of today’s comics would not have been privileged to have; is some of your success steeped in your Boston comedy roots? ,   VF: I come from a great comedy town; when I came up, comedy was on every corner. We used to do shows at Nick’s Comedy Shop in Boston, six shows a night. There are just so many great comics out there right now, like Bill Burr who was a student of mine when I taught comedy. Basically, the comics today have stadium shows, God bless them, but I am just so happy with a 200-seat, intimate crowd where…, Doing a show at HQ2 is a new experience for so many and completely unique to Ocean. What is it like to perform in a room like that? ,   VF: We chose HQ2 because it is so Vinnie Favorito. With the couches and the pub tables on the dance floor; the whole setting of the room; it’s such a special room. You want a feel of a real club and that is in HQ2, I think it’s gorgeous. Once the show begins and it’s contagious, people don't even like to get up to go to the restroom, they’re afraid that they’ll miss something. (laughs).   , When Covid hit, it took the ability to perform on a stage away from live performers. Were you able to pick right up where you left off? ,   VF: I picked up right where I left off. My fans are loving it because they thought maybe I would change because of the pressure of what is going on in the world, and I won’t. I don't talk about politics or religion anything that splits a room; I’m too smart for that.     In the stratosphere of legendary DJ's, Jonathan Peters is one of the names that is instantly recognizable. Emerging from New York City's Sound Factory, Peters has gone on to craft stellar dance music moments, including his iconic remix of Whitney Houston's "Your Love Is My Love" and breaking worldwide dance tracks for brand new artists like Jessica Folker and Sylver Logan Sharp. As Peters…, Michael Cook: How did an East Coast guy become one of the most recognizable names in the DJ business? What one moment can you pinpoint that made you realize this would be the career path you wanted to follow?, Jonathan Peters: I would say putting in those years being a DJ when it wasn’t popular (or profitable). That was for the first fifteen years and that whole fifteen years feels like one big moment - seeing everyone smiling and enjoying themselves really made it clear for me. I used to carry five crates of records up five flights of stairs at five am; I know it wasn’t that moment! (laughs), MC: Who are some of the people you look at as your biggest musical influences that helped craft your own sound?, JP: I was always a Sound Factory kid, so first Frankie (Knuckles) and then Junior (Vasquez). Before I played at Sound Factory I was on that dance floor.. some of the best times. How does it feel to be returning to the booth and sharing it with someone like Oscar?, JP: It’s going to be a Classics party, so they can expect classics, but also good vibes because after the last party with Oscar it’s just good vibes in the booth he’s a good dude and gives off a great energy. A pleasure to share the booth with him..., MC: The Sound Factory was a legendary space and a legendary time for you; what do you remember the most about it and what have you taken from that time that helped shape your career?, JP: The whole experience itself; there were so many factors that made it great. Seeing it all come together week after week and work was something special. Also, working with a guy like Richard Grant was a once in a lifetime experience. What are your memories of that mix? You loved Whitney so much you returned to mix 'Same Script, Different Cast' as well, (with Tony Collucio) which was massively acclaimed as well., JP: I remember listening to that album and when I heard that record, I knew that it was the one. I actually went after that mix, I knew I had to make it happen. What is it about certain artists that you hear that you somehow know will trans late so well onto the dance floor?, JP: I look for amazing singers combined with great songs and I go from there. They don’t always translate, but I have a weekly live stream now every Saturday and I get to test what works and what doesn’t all the time just like the old days. Or sometimes I’ll maybe think something didn’t work and the fans love it; all about finding and creating that magic. Music is an art form, for me it’s not…, MC: What is left that Jonathan Peters wants to accomplish? Any bucket list moments left to achieve?, JP: Having longevity in this business and wonderful fans who support me already feels like the ultimate accomplishment. If I could just continue doing what I do now like I have been for the last thirty years, what more could I ask for? Although, my little girl (who’s five) told me she wants me to teach her to DJ when she’s 6, so that’s got me thinking (laughs)!, MC: When does Jonathan Peters feel his most authentic?, JP: I always feel authentic because I keep it real and don’t follow anybody.
