Their latest innovation is a stunning twist on the classic summer steak dinner, American Cut’s brand new Japanese Wagyu – $225. The cut of meat is an 8 oz. 225 Kagoshima, 30-day snow age, coming direct from Niigata in western Japan, and is widely known as one of the most decadently tasting variations around. The aging process for this Japanese Wagyu is unique, with it being aged in a yukimoro, a storehouse covered with snow, with oxygen organically breaking down its fibers while it tenderizes.
